Scalloped Potatoes with Ham

  1. Heat oil in skillet and saute onions 5 minutes.
  2. Add flour and diced ham. Stir and cook another 5 minutes.
  3. Add milk and heat to simmer.
  4. Coat bottom and sides of a 1 qt. Pyrex baking dish with cooking spray.
  5. Cover bottom with a layer of potato slices.
  6. Pour on the onion/ham/milk mixture.
  7. Add another layer of potato slices.
  8. Next add the slices of swiss cheese.
  9. Add remaining potato slices and top with Parmesan cheese.
  10. Push the top layer down into the milk. Add more milk if needed to just cover potatoes.
  11. Salt and pepper to taste. (1/8 teaspoon pepper works for me).
  12. Bake uncovered about 45 minutes in 350 deg. oven.
