Scalloped Potatoes with Ham

Cooking time: About 1 hour
Makes: 2 servings
Ingredients
- 1 large russet potato, thinly sliced
- 1 T. dried onion flakes (or 2 T. freshly minced onion)
- 4 oz. cooked ham, diced in small pieces
- 4 oz. grated cheddar cheese, low fat or non-fat
- 1 1/2 cup warm milk, low fat or non-fat
Directions
- Spray PAM into 2 qt. Pyrex baking dish.
- Cover bottom with a layer of potato slices.
- Sprinkle with 1/3 of onion.
- Spread the ham on top of the potatoes and onion.
- Add another layer of potato slices and top with 1/3 of onion.
- Add remaining potato slices and top with 1/3 of onion.
- Top with grated cheese and pour milk over the cheese.
- Salt and pepper to taste (1/8 teaspoon works for me).
- Loosely cover with aluminum foil and bake 1 hour in 350 deg. oven.
