Pork Curry

  1. Marinate pork with soy sauce for 1/2 - 1 hour.

  2. Heat 1 t. olive oil in wok or heavy skillet. Stir fry pork 4 minutes. Remove and drain.

  3. Clean wok and reheat. Heat 1 t. olive oil and add onion, celery, and garlic. Cook 3-4 minutes.

  4. Add curry powder, turmeric, cumin, and Cajun seasoning and stir fry 4 minutes.

  5. Add bouillon cube, clove, water, and pork. Cover and simmer 20 minutes.

  6. Top with lemon slices and mint leaves. Cover and simmer 5 minutes.

  7. Serve over steamed rice, garnished with chopped peanuts, chutney, and plain yogurt.
