Veggie Chili
Cooking time: About 10 minutes
Prep time: About 5 minutesMakes: 3 - 4 Servings
Ingredients
- 1 cup diced yellow onions
- 1/2 cup chopped mushrooms
- 2 T. olive oil
- 15 oz. can of diced tomatoes (with liquid)
- 15 oz. can of whole kernel sweet corn (with liquid)
- 15 oz. can of beans (black, kidney, etc.) (with liquid)
- 1 t. Cajun seasoning
Directions
- Heat olive oil in skillet over medium heat.
- Add onions and mushrooms and brown.
- In a soup pot add all ingredients and warm to serve.
