Tuna Omelette

Makes: 1 serving
Ingredients
- 1 T. olive oil
- 1 green onion, chopped
- 1 white mushroom, chopped
- 3 oz. canned tuna, drained
- 2 raw eggs, blended
Directions
- Heat oil in a 9-inch skillet.
- Add mushroom and saute 5 minutes.
- Add green onion and tuna and stir to heat.
- Pour on the eggs and cook at low heat 5 minutes.
- Carefully fold one side of omelette on top of the other.
- Carefully slide folded omelette onto plate to serve.
