Broiled Salmon

Cooking time: 20 minutesMakes: 2 servings
Ingredients
- 10 oz. 2 salmon fillets, with skin attached
- 1/2 t. salt
- 1/4 t. ground black pepper
Directions
- Preheat broiler and set a rack 9 inches below the flame.
- Thaw salmon if frozen. Then wipe salmon fillets with a paper towel.
- Lay fillets skin-side down on a sheet of aluminum foil.
- Liberally sprinkle upper side with salt and pepper.
- Place under the flame on the rack and broil 15 minutes or until the internal temperature is 130 degrees F.
- Remove fillets and let rest 5 minutes on the foil.
- Slide the fillets off their skins and serve.
