Chicken Stew with Lemon

Ingredients
- 2 pieces of chicken (skinless breast, thighs, etc.)
- 2 T. flour
- 1 T. mild olive oil
- 4 mushrooms, sliced
- 1/2 yellow onion, chopped
- 1/2 cup sliced carrots
- 1 large potato, diced
- 1/4 t. black pepper
- 1/2 t. dried dill
- 2 cloves
- 1/2 t. crumbled dry thyme
- 1 t. celery salt
- 2 T. dry sherry
- 1/2 green pepper, chopped
- 1 lemon, juiced
Directions
- Coat chicken with flour.
- Heat olive oil in skillet. Brown chicken about 5 minutes on one side.
- Turn chicken. Add mushrooms, carrots, onions around chicken and brown another 5 minutes.
- Add all other ingredients except for green pepper and lemon juice. Cook covered 10 minutes.
- Add green pepper and lemon juice, cover, and simmer another 10 minutes.
- Pour broth into 2 soup bowls as a first course (with bread).
- Serve stew with bread and salad.
